GREAT FALLS — The Sons of Norway Lodsen Lodge, are keeping their Norwegian traditions alive, as they prepare two seasonal specialties, Lefse and Rosettes. Both of these traditional treats, are highly popular, in the Great Falls area.
Lefse, is a soft Norwegian flatbread, similar to a large, thin tortilla. It is often made with riced potatoes, flour, butter or lard, as well as, cream and milk. The mixture is cooked on a large, flat griddle. It is fun to watch, as they use special rolling pins with deep grooves and long wooden turning sticks, in the making of the flatbread.
Rosettes, on the other hand, are Scandinavian Christmas cookies, that are fun to make, share and eat. They are delicate, crisp, and lightly sweetened. But, what makes them unique, is their shape. They are made from a crepe-like batter, that is quickly deep fried, on a specially shaped iron, which gives them their pretty appearance.

Scandinavian families, often pass down their rosette irons, from generation to generation.
Watching those taking part in the preparations, you see not just club members, but volunteers from the community, as well. Garla Boland, who is in charge of the Lefse making, says these holiday traditions are not just fun and tasty, but, give back to the community. This entire event , serves as a platform, to raise money for over 20 Great Falls area organizations, and a Scholarship Fund. The Sons of Norway, are proud of their heritage, and it shows in the final product, which is quickly sold out.
Volunteers are needed, and welcomed, to make the 80 dozen rosettes, as it takes many hands to complete the process.
If you are interested in participating in this fun activity, you can volunteer from 9am-until done, at the Sons of Norway building, located at 1314 7th St S, in Great Falls, this Thursday, November 14th, and/or Friday, November 15th, or just show up early at the bake sale December 14th, starting at 9am, to make a purchase.
