A new restaurant is preparing to serve the community breakfast, lunch, and dinner.

The Black Bear Diner will open its doors at 6 a.m. on Monday in the former Moonshine Grill building.

The franchise will be open 365 days a year. For the last five days, about 95 employees have trained in food preparation and customer service.

The restaurant focuses on made-from-scratch menu items and general manager Joe Houle said small openings for family and friends have generated good reviews.

“The feedback that I’ve gotten from everybody obviously is, ‘Oh my, the food is amazing, the portions are huge, I can’t believe how much food you put in front of me,’” Houle said. “Then also just the energy of the team members, the culture that we have created here is one that every single one of our team members feels safe and eager and whatnot to come to work.”

Black Bear Diner will officially open on Monday, December 17. Its hours are 6 a.m. to 10 p.m. daily. The restaurant is located at 1400 Marketplace Drive.

Black Bear Diner was founded in Mounta Shasta, California in 1995 and now has 118 locations in 10 states, including California, Idaho, Washington, and Utah.

The company website states that every diner features custom artwork from the inside out, and notes that the bear carvings reflect the local flavor of each diner.

The building previously hosted the Macaroni Grill, which opened in 2008, and the owners switched it to the Moonshine Grill/Shoot The Moon in late 2012. The Moonshine Grill closed in late 2015.
