Do you remember when Kool-Aid used to be the drink of choice in the summer when you were a kid? Well, Kool-Aid is still around and it’s not limited to just mixing with water anymore! How about making some light, delicious cookies using your favorite Kool-Aid flavor right in your own kitchen?

In fact, if you look in your pantry, you may find that you already have everything needed to make these lighter-than-air snacks:

  • 4 egg whites
  • 1/2 teaspoon cream of tartar
  • 1 cup sugar
  • Kool-Aid packets (pick your favorite flavors)

What makes meringue cookies the perfect summer snack? Since meringue cookies are simply made of sugar, egg whites, cream of tartar and flavoring, they have an incredibly light texture. They feel almost lighter than air when you pick them up.

And because of the egg white and sugar, they have a crisp texture that then melts in your mouth.

The hardest part of making this cookie is mixing the meringue. You need to follow the step-by-step directions carefully in order to achieve the right balance of ingredients.

The egg whites also need a lot of whipping to get it into stiff peaks, so you’ll want a hand mixer or bowl mixer to do the job.

After the meringue is ready, you add the powdered Kool-Aid mix in a little at a time for the right color and flavor. Remember, a little bit of the mix packs a big taste punch, so add it in 1/2 teaspoon increments.

You can make the cookies look fancy by piping them with a tipped pastry bag or simply spoon the mixture on a foil-lined, sprayed cookie sheet. Keep a close eye on the cookies in the low-temperature oven (225 degrees) as they can burn quickly after 40 or so minutes.

Allow to cool for about an hour and you will have light, crispy, delicious cookies that will take you back to your childhood!
